What Is GS1? Standards, GTINs, and Their Role in Food Traceability

GS1 is a not-for-profit, international standards organization that maintains the identification and data standards behind barcodes, including the Global Trade Item Number (GTIN) used to identify products worldwide. In food manufacturing, GS1 standards show up most often in product barcoding, pallet labeling, and increasingly in traceability programs built around FSMA Rule 204, the FDA's Food Traceability Rule.

What Does GS1 Actually Standardize?

GS1's core identifiers include the GTIN (Global Trade Item Number), which uniquely identifies a specific product, and the GLN (Global Location Number), which identifies a physical location such as a facility, warehouse, or supplier site. Beyond identifiers, GS1 maintains data-carrier formats - the UPC/EAN barcodes seen at retail, GS1-128 barcodes used on cases and pallets, and SSCC (Serial Shipping Container Code) labels used for logistics units - along with data-sharing networks like GDSN (Global Data Synchronization Network) and EPCIS (Electronic Product Code Information Services) that let trading partners exchange consistent product and event data.

GS1 and FSMA 204 Food Traceability

FSMA 204 requires covered entities to record and share Key Data Elements (KDEs) tied to specific Critical Tracking Events (CTEs) - growing, receiving, transforming, creating, and shipping - for foods on the FDA's Food Traceability List. GS1 US positions its existing standards - GTINs, lot numbers, and GS1-128/SSCC labeling - as a way many companies can capture and share the required KDEs without building a proprietary system from scratch, since a large part of the food industry was already using GS1 identifiers for retail and logistics before the rule existed.

It's worth being precise here: the FSMA 204 final rule does not name GS1 by brand as a mandatory standard. What it requires is that covered entities can produce specific KDEs for specific CTEs in a sortable spreadsheet within 24 hours of a request. GS1's identifiers and data structures are one widely adopted way to meet that requirement, not the only legally required method. GS1 vs. Internal or Proprietary Lot Coding

Many manufacturers already have an internal lot-coding scheme that works fine for their own plant. The gap shows up at the interfaces - when a supplier's lot code, a co-packer's case label, and a distributor's receiving system all use different formats, reconstructing a traceability chain across that supply chain gets slow and error-prone. GS1's value is less about any single company's internal system and more about giving every company in a supply chain a shared language for identifying products, locations, and events, which is exactly the kind of cross-company data trail FSMA 204 requires.

How GS1 Fits Into a Food Safety and Traceability System

For a manufacturer building or upgrading a traceability program, GS1 adoption typically means: assigning GTINs at the right level of packaging hierarchy (each), obtaining a GLN for each physical location that needs to be traceable, and making sure lot and date information travels with the product through GS1-128 or SSCC labels rather than living only in an internal spreadsheet.
