What Is SQC? Statistical Quality Control in Food Manufacturing Explained

SQC stands for Statistical Quality Control — the use of statistical methods, primarily control charts and sampling plans, to monitor a food production process and detect when it's drifting out of specification before it produces defective or unsafe product. Where HACCP asks "is this specific control point in or out of limits right now," SQC asks "is this process behaving consistently over time," making the two complementary rather than competing systems.

How SQC works

SQC relies on a small number of core tools:

  • Control charts (X-bar/R charts, p-charts, c-charts) that plot a measured variable — fill weight, cook temperature, pH, moisture — over time against statistically derived upper and lower control limits.
  • Sampling plans that define how many units to inspect and how often, balancing inspection cost against the risk of missing an out-of-spec batch.
  • Process capability analysis (Cp, Cpk) that measures whether a process, even when "in control," is actually capable of consistently meeting the required specification.

SQC vs. HACCP vs. SPC

These three terms get used inconsistently, but the practical distinction that matters for food manufacturers is this: HACCP identifies hazards and sets Critical Control Points with pass/fail limits, while SPC and SQC both use statistical monitoring to catch process drift before it becomes a failure. Technically, ASQ defines SPC as a subset of SQC — SPC focuses on real-time monitoring of process inputs, while SQC is the broader term that also covers acceptance sampling of outputs — but in day-to-day food-industry usage, the two terms are largely used interchangeably. Why it matters for food safety, not just quality

A process that's slowly drifting — an oven running a few degrees cooler each shift, a filler slowly under-dosing a preservative — won't necessarily trip a CCP limit on any single check, but SQC control charts will show the trend well before it crosses into unsafe territory.
