Physical contamination is the presence of a foreign object in food that can cause injury or illness — one of the three hazard categories recognized by FDA (alongside biological and chemical) that every HACCP plan and FSMA food safety plan must address. Common physical contaminants include glass, metal fragments, plastic, wood, bone, stones, and insect parts.

Common sources of physical contamination

  • Equipment wear — metal shavings from worn blades, screens, or conveyor parts, a common finding in GMP equipment-and-utensils audits.
  • Packaging materials — glass shards from bottling lines, plastic or staples from packaging.
  • Raw material contamination — bone fragments in meat, stones or stems in produce, insect fragments in grain.
  • Facility and maintenance debris — light bulb glass, peeling paint, loose bolts or fasteners.
  • Personnel — jewelry, hair, pen caps, or personal items entering the process area.

How physical hazards are controlled

Prevention relies on a mix of detection technology and process controls: metal detectors and X-ray inspection at critical points in the line, sieving/screening for particulates, glass-and-brittle-plastic control programs that inventory and inspect glass items in the facility, supplier specifications and incoming material inspection, and equipment maintenance programs that catch wear before it sheds material into product.
