Cross-contamination is the unintended transfer of a harmful agent — bacteria, allergens, or chemical residue — from one food, surface, or person to another food that then becomes unsafe. It's one of the most common root causes of both foodborne illness outbreaks and allergen-related recalls, and it's addressed differently depending on which type is involved.
Main types of cross-contamination
- Biological cross-contamination — pathogens (Salmonella, Listeria, E. coli) transferring from raw product, unwashed produce, or contaminated surfaces/hands to ready-to-eat food.
- Allergen cross-contact — trace amounts of an allergen transferring to a product that doesn't list it as an ingredient, typically via shared equipment, utensils, or airborne dust. The FDA recognizes nine major food allergens — milk, egg, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans, and sesame (added January 1, 2023).
- Chemical cross-contamination — cleaning chemicals, sanitizer residue, or lubricants transferring onto food-contact surfaces or product.
Common real-world examples
Some of the most frequent scenarios include: raw poultry juices contacting ready-to-eat salad ingredients on a prep surface; a shared production line running an allergen-containing product followed by an allergen-free one without adequate changeover cleaning and verification; unwashed cutting boards or utensils used across raw and cooked product; and employees moving between raw and ready-to-eat zones without changing gloves or washing hands.
How HACCP and prerequisite programs prevent it
Cross-contamination is controlled primarily through prerequisite programs rather than a single CCP: physical or procedural separation of raw and ready-to-eat zones, color-coded equipment and utensils, validated cleaning and sanitation procedures (including allergen changeover cleaning with verification swabs), personnel hygiene practices, and facility traffic-flow design that limits movement between zones. Where the risk is high enough — for example, a shared line producing both allergen and allergen-free products — allergen control becomes a documented preventive control under the food safety plan, not just a general GMP item.
